Ingredients

Adjust Servings
1 lb Salt-fish or Codfish (remove bones)- boil 8 -12 minutes buy fresh
1 ½ cups 16 Mixed Beans Package (pressure cook 15 minutes)
2 stacks Scallion (diced) - optional
1 ½ medium Onions (peeled & diced) spicy
1 small Tomatoes (diced)
4 cloves Garlic (peeled and mashed)
½ piece Scotch Bonnet Pepper, or real chili pepper) - cut it in half
¼ teaspoon Pimento Berries - dried
1 sprig Thyme (fresh) - (tie to size of one finger)
2 tablespoons Cooking Oil - I use coconut oil
¼ cup Water - Note: if you used too much water it could make it have a fresh flavor - be mindful
¼ piece Sweet or Bell Pepper - optional
2 tablespoons Ketchup - add this near the end
½ teaspoon Vinegar - white or flavored
THE CHEF RECOMMENDS USING THESE HERBS - optional,.! (for those who wants to use powdered seasonings add: ½ to 1 teaspoon of All Purpose Seasoning - I could say don't add it; however most people do):
¼ to ½teaspoon Parsley, or Cilantro (dried or fresh) - flake
¼ to ½teaspoon Basil (dried or fresh) - flake it
¼ to ½teaspoon Sage (dried or fresh) - flake it
¼ to ½teaspoon Tarragon (dried or fresh) - flake it - optional

Directions

Preparation:

Boil the frozen mixed vegetables for 8 minutes. Remove water, cover it, and put aside. Alternatively, you can use the canned mixed vegetables. First, remove the scale from the codfish. Use a knife to separate the scale from the fish and carefully peel off.
Alternatively put the codfish to boil in water for 8 minutes. Once cool simply use a knife to remove the scale from the codfish. Now remove the bones, and then dice the codfish into bite-able chunks. Cover and put aside until you are ready to use it. Strip wash and dice all the seasonings. Put the ingredients into separate bowls. Pressure cook beans for 15 minutes! Or use canned mixed beans if it is available.

Cooking:

Gauge your stove on 6, then for one minute, put to heat a frying pot for stewing. Next, add the oil. After a minute add the diced codfish, allow frying for 2 minutes. Add the onions. Allow frying, and then add the other seasonings in 30 seconds.
Stir in the ingredients, next add ¼ cup of water. Now, this time cover the frying pot well with a proper lid. Allow to simmer for 8 minutes with the gauge on 6. To prepare, cook totals 35 minutes. Add the mixed beans, and then the ketchup and you are finished.
