½ or 1 lb SaltFish/Codfish - boil 8 -12 minutes and then remove bones buy fresh | |
1 dozen opened pods Ackee Fruit – with two or three fingers | |
1 or 2 stacks Scallion (diced) - optional | |
1 ½ medium Onions (peeled & diced) | |
1 or 2 small Tomatoes (diced) - optional | |
1 or 2 cloves Garlic (peeled and mashed) | |
½ piece Pepper (Scotch Bonnet or real chili pepper) - cut it in half | |
½ teaspoon Pimento Berries - dried | |
sprig Thyme (fresh) - (tie to size of one fingers) | |
2 to 4 tablespoons Cooking Oil | |
¼ cup Water - optional (Note: if you used too much water it could make it have a fresh flavor - be mindful) | |
¼ piece Sweet/Bell Pepper - optional |

Preparation:
First, be sure you can see the ackees in their pods. Usually there are three ackees to a pod, sometimes two. If you force the pod, open yourself. That makes it dangerous to eat. It is important the ackee’s pod split open naturally on the tree. Alternatively, use the canned ackee.
Remove the ackees from their pods. Use your fingers to remove the seed from the ackees. Alternatively, you can use a knife. Use knife remove waste between the ackee fruits.
Rinse the ackees and put to boil in water to cook 15 to 20 minutes. Bright, yellow, and tenderness, signs it is ready. Put aside until you are ready to use it.
First, remove the scale from the codfish. Use a knife to separate the scale from the fish and carefully peel off. Then put to boil.
Alternatively put the codfish to boil in water for 8 minutes. Once cool simply use a knife to remove the scale from the codfish. Now remove the bones, and then dice the codfish into bite-able chunks. Cover and put aside until you are ready to use it.
Strip, wash, and dice all the seasonings. Put the ingredients into separate bowls.

Cook it:
Gauge your stove on six, put to heat a frying pot for stewing. Next, add the oil. After a minute add the diced codfish, allow frying for 2 minutes. Add the onion. Allow frying, and then add the other seasonings in 30 seconds.
Stir in the ingredients; next add the cooked ackees and ½ cup of water. Now, this time cover the frying pot properly with the pot’s lid. Allow to cook for 5 minutes with the gauge on four. You are finish. To prepare and cook this national meal total 25 minutes.
