1 ¼ cups Brown Sugar | |
4 whole Eggs (beaten) | |
4 ½ cups Bananas (mashed overripe) - 10 large bananas | |
1 teaspoon Cinnamon Powder | |
1 teaspoon Nutmeg (grounded) | |
2 tablespoons White Rum (optional) |

Directions

Preparation:
Preheat oven to 350 degrees F. (175 degrees C).
Lightly grease two 9 x 5 inches loaf-pan. Alternatively, 13 x 5.5 inches with smaller baking pan. Peel mashed over ripening bananas smooth.

Mix Dough:
In a large bowl, combine flour, baking powder, soda, grated nutmeg and salt. In a separate bowl, cream together butter and brown sugar.
Stir in eggs and mashed bananas until blends properly. Beat eggs first!
Stir banana mixture into flour mixture; stir dissolving. Pour batter into prepared loaf pan. Lifted dropped, few times releases bubbles.

Bake it:
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out cleaned. Allow cooling!
After that, removed cake by using small metal spatula or a knife; score around sides loosens cake. Flipped and placed on a plate, then slice for 24 people. Keep sealed in refrigerator for 5 days freshness.
