1 cup Butter (nicer the butter, the better cake taste) | |
2 cups Sugar (brown or granulated) | |
4 whole Eggs (beaten) | |
1 cup Cow's Milk | |
2 teaspoons Vanilla Extracted |
ICING FOR FROSTING:
12 ounces Icing Sugar, (powdered sugar) | |
2 ounces Shortening, (room temperature) | |
1 tablespoons Lime Juice | |
2 tablespoons White Rum (to preserve it; optional) | |
2 tablespoons Water | |
1 or 2 drops Food Coloring |

Preparation:
Cut two grease papers to size baking pan, which is 8.5 to a 9 inch diameter baking pan.
Grease the baking pan, and lay the papers. Put aside.
This Jamaican style birthday cake recipe can be done two ways. a) After baking and cooled, lay icing all on one large cake.
b) Or, bake two smaller cake, lay icing in the middle and all over, making two layered cake. (Use 7 inch baking pan, then put half the dough in each pan. Bake for 30 to 35 minutes.

Keep Prepping:
Sift the flour with the baking powder, and salt. Put aside.
Now, dice the room temperature butter, and add the sugar. Use a wooden spoon and cream together.
Next, beat the eggs with the vanilla, and add cow's milk.
Now add the egg mixture to the butter mixture.
Next, add the flour mixture to the creamed butter.
Use a mixer, or a wooden spoon to beat the dough well.
After that, pour the dough in the baking pan.
Lift and drop, two to six times to release the air bubbles.

Bake it:
Bake for 55 minutes in a preheated oven at 350 degree F., using 8.5 to 9 inch baking pan, Do not over oven within the time.
If baking double layer cakes use two 7 inch baking pans, and then divide dough equally. Bake for 35 minutes.
Insert a toothpick and if it's clean, then you are finish. Allow to cool, before you remove the cake from the pan.
Flip baking pan with cake over, use your palm to hold the surface of the cake, remove the grease paper, and then put a plate on the bottom. Now flip upright.
