2 Kidney Beans (pressure cook for 20 minutes, alternatively you could use the canned beans.) buy fresh | |
1 cup Callaloo (shredded) | |
½ piece Scotch Bonnet Pepper (ripe) | |
1 small Onion (diced) | |
¼ teaspoon Pimento Berries - dried | |
1 clove Garlic (mashed, or grind to puree) | |
sprig Thyme - tie together the size of 1 finger | |
1 cup Water | |
½ to 1 cup Coconut Milk | |
¼ piece Ginger Root (whole) | |
1 whole Cho-cho (peeled &diced) | |
1 whole Sweet Potato (peeled, diced to chucks) | |
1 whole Irish Potato (peeled, diced to chucks) | |
1 small Carrot (diced to chucks) | |
2 to 4 tablespoons Cooking Oil |

Directions

Preparation:
Peel, wash, and diced all the vegetables.
Put to heat a pot for stewing with stove gauge on flame 6.
Wait for 30 seconds, and then add the coconut oil.
Wait for 40 seconds, and then add the onions, garlic, and then the shredded callaloo.
With your stove flame set on medium 6. Stir-fry for 1 minutes.

Cooking:
After that, turn the stove on flame 4. Add the coconut milk, the water, diced Irish and sweet potatoes, cho-cho, and carrots.
Add the scotch bonnet pepper, and the cooked kidney beans. Stir in slightly.
Use the pot's lid to cover the pot properly, and allow simmering for 15 minutes.

Serve it:
After the time, you are finish. Serve in a soup dish only, or with bread and crackers. (Note: Please allow your meals to cool before eaten).
This is serving for a family of five persons. All the meals are very easy on the stomach when it’s prepared with natural herbal and vegetables.
