Ingredients

Adjust Servings
½ of a whole Chicken (cut to parts, do not debone. However you could use boneless chicken as well.) buy fresh
300 grams can Baked Beans
2 stacks Scallion (diced) - optional
1 ½ small Onions (peeled & diced)
2 small Tomatoes (diced) - optional
4 cloves Garlic (peeled and mashed)
½ ripe Pepper (Scotch Bonnet or real chili pepper) - cut it in half
¼ teaspoon Pimento Berries - dried
1 sprig Thyme (fresh) - (tie to size of one finger)
2 to 4 tablespoons Cooking Oil
½ cup Water - (Note: if you used too much water it could make it have a fresh flavor - be mindful)
¼ piece Sweet/Bell Pepper - optional
1 to 2 teaspoons Sugar - optional
2 tablespoons Ketchup adds at the end to thicken - optional
THE CHEF RECOMMENDS USING THESE HERBS,.! (for those who wants to use powdered seasonings add: ½ to 1 teaspoon of All Purpose Seasoning - I could say don't add it; however most people do):
¼ to ½ teaspoon Cilantro & or Parsley (dried or fresh) - flake it
¼ to ½ teaspoon Basil (dried or fresh) - flake it
¼ to ½ teaspoon Sage (dried or fresh) - flake it
¼ to ½teaspoon Tarragon (dried or fresh) - flake it - optional

Directions

Preparation:

First, peel, wash and dice or slice the seasonings. Second, cut chicken to 1 to 2 inch pieces
Marinate the chicken with the seasonings for a while. (Do not add the herbs yet)

Cook it:

Next to heat a stew pot a frying. Gauge stove on flame 6 or 8 (Hi). Add the cooking oil. Allow to get hot, or until a little smoke.
After that, add the chicken piece by piece. But first use a cooking fork to remove the seasoning from the chicken piece. (If you don' t remove the seasoning, it will burn before the chicken cooks.) Allow frying on one side for 4 to 6 minutes, or until browns.

Cook it more:

Do the other side for the same time. If you are using boneless chicken the frying time is less. Once you complete that, carefully remove half the cooking oil. (You can use a spoon that scoops.) Turn the stove off while you remove the oil. Now, after that turn the stove on again on flame 4.
Add the diced onion, 30 seconds after the the garlic, then the other seasonings. Stir fry for 1 minute or less. After that, add the sugar. (It really brings the taste up).

Add Beans:

Next open and add the canned baked beans, and then the dried herbs. Stir in!
Add the water to soften the thickness of the gravy. Allow simmering for 3 minutes on low flame to finish.
