1 to 1 ½ lbs Chicken Parts with Bone - chopped in chunks buy fresh | |
3 cloves Garlic (minced or mashed) | |
½ inch Ginger Root (minced, mashed or grounded) | |
3 medium Onions (green) (- chopped in quarters; separate leaves) | |
4 whole Chili Peppers (dried; shredded fine, do not remove seeds) - alternatively buy it shredded - optional | |
1 small canned Mushroom - optional | |
1 medium Carrot (small) – cut tiny carrot sticks | |
1 lb Broccoli Crown, clean cut into florets (You could use Cauliflower or both) | |
¼ cup Water | |
2 cups Cooking Oil: (use for deep frying only) |
MARINATING SAUCE:
1 tablespoon Soy Sauce | |
1 tablespoon Food Cornstarch | |
2 tablespoons Oyster Sauce (use Hoisin Sauce, or Char Siu Sauce for different dinner idea) | |
1 tablespoon Cooking Wine: Use Sherry, Rice Wine, or (Kwangtung Mijiu: it flavors gin), use your favorite Chinese cooking wine. | |
STIR-FRY SAUCE: | |
1 tablespoon Soy Sauce | |
2 tablespoons Water or Chicken broth | |
1 tablespoon Cornstarch | |
1 tablespoon Cooking Wine: Use Sherry, Rice Wine, or (Kwangtung Mijiu: it flavors gin), use your favorite Chinese cooking wine |

Directions

Preparation:
Step 1: Combine stir-fry sauce: soy sauce, rice wine, water or chicken broth with cornstarch into a bowl. Put aside for later!
Now, combine marinating sauce: oyster sauce, soy sauce, rice wine, with cornstarch into a bowl. Stir in proper put aside for later!
Next, remove chicken’s skin, trim fat, chop any chicken parts in four pieces of chicken chunks.
After that, allow marinating at least 10 minutes into marinating sauce. (You could allow marinating half the day; keep refrigerated).

Continue Preparing:
Step 2: Peel or strip, wash, and prepare all the vegetables properly. Remove any traces of soil or debris.
Cut stems off dried chili peppers, use food sizzler shred fine, and do not remove seeds. (Alternatively, buy shredded chili peppers).
Grind garlic and ginger to puree. (Keep shredded ingredient separate).

Pare the carrots by lightly scraping it with knife. Cut off both ends of the carrot. Cut it into two halves, about 4 inches long. If you prefer shorter carrot sticks, or your carrots are more than 8 inches long, cut the carrot into thirds. Cut desired size of carrot sticks.
Cut onions in quarters, and separate leaves; diced scallion if using.
Prepare broccoli: (I rinse it with white vinegar and water); cut forest.

Cook it:
Step 3: Put to heat wok or small saucepan allow heating for 2 by 3 minutes. Turn stove’s gauge on medium/low (4).
Next, add 2 cups cooking oil into heating pan, allow for 6 minutes to get hot, or until you see little smoke.
Now, stir in marinating bone in chicken chunks properly, and then add it to the heating oil on the stove. Immediately use wooden spoon stir in separating chicken chunks for 40 seconds, be cautiously.
Allow frying 10 between 12 minutes stir 2 minutes between times.

Bone in Chicken Broccoli Oyster Sauce will look like stew. This is a African and Caribbean Chinese Cooking. Serve with bar-boiled rice or lo-mein noodles. Cooking, preparing time is 35 minutes. Seal leftovers properly keep out 6 hours prior cooking.
