2 cups Manicotti Pasta (you choice from various varieties) buy fresh | |
1 lb Chicken Breast (Boneless) - cut in chunks | |
1 small Onion (green, and red, sliced) | |
4 cloves Garlic (peeled & diced or mashed) | |
1 cup Coconut Milk or Powder 50 gram pack | |
¼ cup Cherry Tomatoes - optional | |
1 to 2 stacks Scallion (diced) | |
1 teaspoon Basil (dried or fresh) | |
1 teaspoon Cilantro & or Parsley (dried or fresh) | |
1 teaspoon Salt | |
1 tablespoon White Vinegar, or Red Vinegar | |
2 tablespoons Vegetable or Coconut Oil (or use Olive oil) | |
½ piece Pepper (Scotch Bonnet) - cut in half using for flavor only | |
1 cup Sweet Corn Kernels - canned |

Directions

Preparation:
First prepare the vegetables by peeling, washing and dicing.
Put to boil manicotti pasta in enough water for 5 to 6 minutes, or until cooked, do not over cook. Do not add salt yet,..!
After finished cooking pour it into a colander allow draining.
After that, put saucepan to on medium heat, add oil allow to hot.
Fry chicken chunks golden on each side 3 minutes for a total of 6 to 8 minutes or more. Ensure chicken is cooked properly.
Next, add diced onion, scallion, garlic and allow it to saute golden a little bit.
Now, add coconut milk, leave pot’s lid off, add cooked manicotti pasta, and allow the stew to thicken. Remember lid off,…! Add the other ingredients as well.
Cooked it for 6 to 8 minutes, once stew starts sticking to pot’s bottom it ready.
Add corn kernels and then finished.
