1 lb Butter - room temperature buy fresh
½ lb Sugar
10 whole Eggs
1 teaspoon Almond Essence
1 teaspoon Vanilla Extract
1 teaspoon Rose Water
1 lb Flour
1 tablespoon Baking Powder
2 tablespoons Mixed Spice
2 tablespoons Cinnamon Powder
3 tablespoons Browning - optional (note: if add the browning the cake would be more like a pudding. Without the browning the cake is sponge like and less dark.)
Christmas Cake: FRUITS (diced or blended together)
2 ½ Raisins
½ lb Prunes
½ lb Dates / Currants
1 lb Mixed Fruits
4 cups Red Wine
7 tablespoons White Rum
½ lb Cherry - diced (note: the cherry is not to be soak)( you will use it to sprinkle on top just before you bake the cake)

Directions

Preparation:

Soak diced raisins, mixed peel and prunes fruits in the red wine overnight or at least 3 hours. Some people soaked for weeks. Ensure, the fruits diced or blended before soaking in the wine. Remember do not soak the diced cherries.
I am using three 8.5 inches diameter baking-pans. Cut two greased papers to size. Then use butter to lightly base all inside the baking pans. Lay the two greased papers on bottom of the baking pans. Get ready to sift together the all dried ingredients, such as the flour, baking powder, mixed spices, cinnamon powder, and grated nutmeg. (Note: do this before the egg mixture. The less time broken egg sits waiting to use, the less cake smells raw.)

Keep Prepping:

Cream the butter and the eggs until smooth. Add vanilla extract, almond flavoring, and rose water. Break eggs two at a time, into separate container before adding to the batter. (Do not add eggshells or spoiled eggs.)
Now is a good time to preheat your oven at 250 degrees F. Do so 10 minutes before you start baking. Add the egg mixture to the dried ingredients, next browning if using, and then soaked diced fruits raisins prunes with wine. Combine properly by using a wooden spoon are any cake mixer until smooth.

Pour the cake batter half way the baking pans. Then lift and dropped each baking pan with dough on a hard surface like a table to release the air bubbles. Next, sprinkle the diced cherries on top before you put it in the oven. For a small baking pan 7 to 8 inches the baking time is 3 hours and 30 minutes. For a larger baking pan 9 to 10 inches the baking time is 4 hours and 30 minutes. Do not open the oven until it is at least 8 to 5 minutes before completion.
