2 ½ cups Raw Carrots (grated 3/4 lb.) buy fresh | |
1 teaspoon Baking Powder | |
1 cup Butter | |
1 ½ cups Sugar (granulated) | |
2 teaspoons Vanilla Extract | |
½ teaspoon Salt | |
4 large Eggs (beaten) | |
¼ teaspoon Nutmeg (grounded) | |
2 cups Flour (all purpose) | |
1 ½ teaspoons Cinnamon Powder | |
1 teaspoon Baking Soda |
CARROT CAKE PEANUT FROSTING:
2 cups Icing Sugar, (powdered sugar) | |
8 ounces Cream Cheese (room temperature) | |
¼ cup Butter (unsalted & room temperature) | |
1 teaspoon Vanilla Extract | |
3 or 4 tablespoons Ginger Juice (1oz piece blend with water and strain for the juice only) | |
GARNISH: (For this recipe, you only need half the ingredients to frosting this cake.) | |
¼ cup Peanuts (roasted) - crushed |

Directions

Preparation:
Preheat oven to 350 degrees F. (or 180 degrees C) 8 to 10 minutes before baking.
First, lightly buttered and line two 7.5-inches baking pans with each two grease-proof papers.
Sift flour, baking powder, soda, cinnamon powder, grated nutmeg, and the sea salt. Put aside.
Strip, washed, and grate the carrots finely.
Use an electric mixer on low speed to beat eggs for one minute in a bowl. Partially add the sugar while mixing.

Cream the room temperature eggs with sugar by beating for 3 minutes, on low speed. (If you use high speed, it will foam and you do not want that happen.)
Add the butter, and then vanilla extract, mix properly for one minute on low speed.
Now, add the flour mixture, and stir in properly.
After that, use plastic spatula gently folds the grated carrots.
Mark as complete

Bake it:
Now, pour into two separate baking pans, equally.
Bake 350 degrees F. for 30 minutes.
Insert toothpick in center, it should comes out with just a few moist crumbs.
Do not over-bake!
After the cakes cools, use a knife to score between around the cake and baking pan; removed cakes easily. Remove the greased papers.
Now, you are ready, add frosting to the cakes.
