½ piece Onion (diced or spiced) | |
4 cloves Garlic (mashed) or Powdered | |
1 stack Scallion | |
½ teaspoon Cilantro & or Parsley (dried or fresh) - flakes | |
½ teaspoon Rosemary (dried or fresh) - flakes | |
½ teaspoon Sage (dried or fresh) - flakes | |
½ to 1 teaspoon Salt | |
1 cup Cooking Oil (use to fry or deep chicken fry only) | |
½ to 1 teaspoon Cornstarch | |
1 cup Flour (use to coat fish-balls only) |
ALFREDO SAUCE (homemade):
¼ cup Butter | |
2 cloves Garlic (mashed) or use teasp. powdered | |
1 ¼ cups Heavy Cream or Whipping Cream (Don't have heavy cream? Use Evaporate Milk instead.) Healthy Heavy Cream: 2 cups coconut milk, 2 teaspoons of Cornstarch, and Wheat Flour. | |
¼ piece Scotch Bonnet Pepper or Red Pepper | |
¼ teaspoon Salt | |
1 ½ cups Cheddar or Parmesan Cheese (grated) | |
1 or less tablespoon Basil (dried or fresh diced fine) | |
1 or less tablespoon Cilantro & or Parsley (dried or fresh diced fine) | |

How to make Alfredo Sauce (homemade):
Put ingredients in big enough sauce pan, and put it on stove at medium heat. Add oil or butter saute garlic for few seconds. Reduce the heat to low, and then add cream, pepper, and salt.
Allow simmering on low heat for 8 minutes.
Next, turn off stove, and then add cheese slowly while stir-in it.
Keep stove on low and cook for 2 to 3 minutes, stir-in it constantly.
Serve Homemade Alfredo Sauce hot,….!

Cooking:
Next, tenderized fettuccine pasta by boiling it for 6 to 8 minutes, and then drain the water.
Now, put same saucepan on medium/low heat and add 1 to 2 tablespoons oil. Allow to get hot for 20 seconds, add diced onion, and then scallion. Allow to saute for 30 seconds, add garlic allow saute for 10 second, add herbs, Alfredo sauce, cooked fettuccine pasta, and then gently stir cooked fish-balls in the mixture. (Note: leave back few fish-balls to put on top the meal at serving.)
At this point, reduce heat to low, stir in it properly, use the pan’s lid cover it, and allow cooking for 1 between 2 minutes. Finished…!
