Hominy Corn Porridge to Gain Energy

1 cup Cornmeal - refined is best buy fresh | |
¼ teaspoon Cinnamon Powder | |
¼ teaspoon Nutmeg - grounded | |
¼ teaspoon Salt - I use sea salt | |
½ teaspoon Vanilla Extracted | |
½ cup Sugar | |
½ cup Condensed Milk or use: 50 g Coconut Milk Powder | |
300 grams Hominy Corn or Sweet Corn - drain water |
Alternatively use dried hominy corn:
1 cup Raw Dried Hominy Corn |

Directions

Cornmeal:
Put the cornmeal to soak in the water for no more than 20 minutes..
Put 1 1/2 cups of water to boil with the stove gauged on 4. Once boil to, add the soaked cornmeal and water.

Cooking:
Now put your stove on low. (simmering).
While the cornmeal porridge is simmering, stir it in until it is creamy. Doing this will not make it lumpy. Stir in occasionally!

Sweeten:
Add the sugar, spices and a pitch of salt.
Use the pot's lid, slightly cover it three quarter way.
After about 25 to 30 minutes add the milk (coconut milk).
Gentle stir in. You want the cornmeal porridge to be creamy.
With the stove still on very low. Allow it to boil for another 15 to 25 minutes.

Add Corn:
Half way between this time add the hominy corn. Add it 8 - 10 minutes before the hominy porridge finished.
Jamaican Cornmeal Porridge is ready to serve.
If you are serving hot, be careful do not get burn.
