½ whole Chicken - cut to parts buy fresh | |
1 stack Scallion - chopped | |
2 small Onion - diced | |
2 small Tomatoes | |
4 cloves Garlic - mashed | |
¼ piece Bell or Sweet Pepper - diced | |
½ piece Scotch Bonnet Pepper | |
½ inch piece Ginger | |
1½ tablespoon Salt - I use sea salt | |
1 tablespoon Parsley Flakes - dried or fresh | |
1 tablespoon Basil Flakes - dried or fresh | |
½ or lessteaspoon Pimento Seeds or Berries - dried | |
1 teaspoon Thyme (fresh pieces tie together the size of one finger) | |
1 ½ tablespoon Vinegar - white or flavored | |
1 to 3teaspoons Jerk Seasoning | |
½ cup Cooking Oil - I use coconut oil (after frying remove half) | |
2 cups Water | |
3 tablespoons Ketchup |

Directions

Prepare Vegetables and Chicken:
Strip, wash, and dice all the seasonings.
Cut half of a chicken into chicken parts. Remove chicken’s skin (optional). Nevertheless, remove the chicken’s skin.
Combine the chicken’s parts with all the seasonings, herbs, and vegetables into a bowl. You can marinate the chicken from 15 minutes to 12 hours. Refrigerate within the time.

Cooking:
Then after that, put your stove on Hi flame. Put to heat a frying pot for stewing. Then add the oil. Wait for 1 to 2 minutes or until you see a little smoke.
While waiting for that, start removing the seasonings from the chicken parts. To do that, hold the tip of the chicken part with your two fingers. With the other hand, use the cooking fork to remove the seasonings.

Cooking 2:
Next, add the chicken’s parts in the hot oil. Allow it to fry on 1 side for 5 to 6 minutes, and other side 5 to 6 minutes too.
Remove half the oil after fry, still hot. Use a spoon that scoops. Immediately add all the seasonings, cover the pot for one minute, next add the water, and then cover the pot with lid properly.
Now your stove should be gauge on four. Allow the chicken to stew for 12 to 15 minutes.
Next, add the ketchup and simmer the chicken for 3 to 5 minutes. Finish!
This chicken gravy is not thick, it is thin!
