1 to 2 lbs Cow's Kidney (chop cubed chunks) buy fresh
2 stacks Scallion (whole, beat with spoon)
1 ½ medium Onion
6 cloves Garlic (peeled mashed)
½ to 1 teaspoon Pimento Berries - dried
sprig Thyme (fresh) - tie to two fingers)
1 small Tomato
1 tablespoon Salt
½ piece Pepper (Scotch Bonnet); or Fresh Chili Pepper - cut in half
½ inch Ginger Root (wash it, do not peel)
1 tablespoon White/Cedar, or Wine Vinegar
1 tablespoon Browning
¼ or ½ piece Sweet/Bell Pepper
2 to 4 tablespoons Cooking Oil
¼ cup Ketchup
2 cups Water
VEGETABLES TO ADD INTO THE STEW AS WELL: (add any or two of the following 8 minutes near the end)
1 small Carrots (diced)
1 small Cho Cho (diced) - optional
1 small Turnips (peeled and cubed) - - if using not add potato
½ pound Irish Potato (chopped to small chucks) - if using not add turnip
THE CHEF RECOMMENDS USING THESE HERBS,.! (for those who wants to use powdered seasonings add: 1 + 1/2 tablespoons of All Purpose Seasoning, 1 teaspoon of Tenderizer instead):
1 tablespoon Cilantro & or Parsley (dried or fresh) - flake it
1 tablespoon Basil (dried or fresh) - flake it
1 tablespoon Rosemary (dried or fresh) - flake it
1 teaspoon Marjoram (dried or fresh) - flake it
½ teaspoon Oregano (dried or fresh) - flake it
4 pieces Whole Cloves Spices

Directions

Preparation:

Strip, wash, and dice all the seasonings. Put the salt and onion into separate bowls. (Use the salt and the white vinegar halfway in your cooking. If you do so the kidney will be tender, than if you added salt on the raw kidney.)
Use your knife to cut half-inch pieces from the kidney until you get to the white part. Do not use the white part.

Cook it:

Put to heat a pot for stewing; Gauge your stove on 8 for one minute. Add oil, leave for a minute, and wait for smoke.
After a minute, add the onions. Allow to fry, and then add the other seasonings in 30 seconds, then the diced kidney. Stir in, and add water. Now, this time covers the frying pot well with a proper lid. Allow to cook for 25 minutes with the gauge on 4. Add the ketchup and then you are finish. To prepare, cook stewed kidney totals 35 minutes.
