¾ to 1 lb Chicken (de-bone chicken’s thigh, or leg is best; use breast last option), (cut ¼ inch chicken chunks) buy fresh | |
2 cup diced or 1whole Zucchini (diced not fine) | |
1 small Carrot - cut small carrot thick wheels | |
3 medium Onion (green) - cut in half or quarters, separate leaves | |
1 stack Scallion (diced) - optional | |
1 tablespoon Pepper Corns (use the flavor oil before stirfry) rinse and drain before using | |
2 cups Coconut, Vegetable Oil: (use for deep frying only) | |
Stir-fry Addictive: | |
½ teaspoon Sugar | |
6 to 8 whole Chili Peppers (dried; shred it fine, do not remove seeds) alternatively buy it shredded – optional |
Marinating Sauce:
1 tablespoon Soy Sauce | |
2 tablespoons Coconut Oil, (use any cooking oil) | |
3 teaspoons or 1 tbsp. Food Cornstarch | |
1 teaspoon Salt | |
½ piece Pepper (use in half of a whole pepper), or use teaspoon paprika powder | |
½ inch Ginger Root (fresh) - shredded fine or grounded | |
1 tablespoon Cooking Wine: Use Sherry, Rice Wine, or (Kwangtung Mijiu: it flavors gin), use your favorite Chinese cooking wine |

Directions

Preparation:
Use chicken's thighs, remove the bones, and then chop small chunks.
Marinade the chicken chunks in marinating sauce. Put it aside 10 minutes!

Cook it:
After that, deep fry chicken chunks golden for 6 minutes on high heat.
Remove must cooking oil, leave 1 tablespoon in sauce pan or wok.
Add peppercorn allow cooking for 40 seconds, and then add the dried chili peppers, ginger and scallion, stir fry it on slow heat.
Next, turn flame up, add cooked chicken chunks, add rice wine, and then the salt.
After that, dash in the sesame seeds, sesame oil and sugar. Stir Fry it well!
