½ or 1 lb Saltfish/Codfish (remove bones)- boil 8 -12 minutes buy fresh | |
1 dozen Okras (washed and diced) | |
1 or 2 stacks Scallion (diced) - optional | |
1 medium Onions (peeled & diced) | |
1 small Tomatoes (diced) - optional | |
1 or 2 cloves Garlic (peeled and mashed) | |
½ ripe Pepper (Scotch Bonnet or real chili pepper) - cut it in half | |
¼ teaspoon Pimento Berries - dried | |
sprig Thyme (fresh) - (tie to size of one finger) | |
2 to 4 tablespoons Cooking Oil | |
¼ to ½ cup Water - (Note: if you used too much water it could make it have a fresh flavor - be mindful) | |
1 tablespoon Ketchup adds at the end to thicken. - optional | |
¼ to ½ piece Sweet/Bell Pepper - optional |
THE CHEF RECOMMENDS USING THESE HERBS,.! (for those who wants to use powdered seasonings add: ½ to 1 teaspoon of All Purpose Seasoning - I could say don't add it; however most people do):

Directions

Preparation:
Cut the top and bottom ends off the okra. Then slice to ½-inch pieces. Next, put to boil in enough water to cook it for 12 minutes. First, put the stove’s gauge on 6. Remove the water and put aside.
First, remove the scale from the codfish. Use a knife to separate the scale from the fish and carefully peel off the scale.
Alternatively put the codfish to boil in water for 8 minutes. Once cool simply use a knife to remove the scale from the codfish. Now remove the bones, and then dice the codfish into bite-able chunks. Cover and put aside until you are ready to use it.
Strip, wash, and dice all the seasonings. Put the ingredients into separate bowls.

Cook it:
Gauge your stove on 8, then for one minute, put to heat a frying pot for stewing. Next, add the oil. After a minute the diced codfish, allow frying for 2 minutes. Add the onions, allow frying, and then add the other seasonings in 30 seconds. Stir in the ingredients.
Now put the diced okra on top, then add ½ cup of water. This time covers the frying pot well with a proper lid. Allow to cook for 8 minutes with the gauge on 4, and 4 minutes on gauge 2.
Add the ketchup and turn the stove off. To prepare, okra and codfish totals 35 minutes.
