¼ stick Butter or Margarine buy fresh | |
2/3 cup Sugar (brown) | |
1/3 cup Shortening | |
¾ cup Cow's Milk | |
1 large Egg | |
1 + 1/3 cups Flour (all purpose) or baking | |
9 Pineapple Slices in juice (from 14-oz can), drained | |
1 whole Jamaican Apple (diced to the size of a cherry, or use cherry) - use cherry instead | |
½ teaspoon Salt | |
1 ½ teaspoons Baking Powder |

Preparation:
I am using a 10 inches square baking-pan. Baking dish is best.
Add the melted butter into baking pan.
After that, sprinkle half the brown sugar evenly over melted butter.
Place the pineapple slices evenly apart. Place the diced Jamaican apple in the center of each pineapple slice. Sprinkle other half sugar!
First, sift flour, baking powder and the salt in a large bowl. Put aside.

Good Job Prepping, Keep Going:
Cream the butter, shortening, and granulated sugar in a separate bowl, use a wooden spoon or spatula, add egg, and the coconut milk. Mix properly with wooden spoon or electric mixer.
Now, add the flour mixture, and then mix properly for 2 minutes.
After that, pour the batter over pineapple and apple pieces.
The dough will be thick; therefore, using spatula evenly spreads.

Bake it:
Bake in 350° F. preheated oven for 55 minutes. Insert the toothpick in the center, if comes out cleaned, you good! Allow cooling.
Score between the baking pan and cake, and then places a plate on top.
Flip over then carefully remove baking pan from cake.
Pineapple upside down cake is nice served warm.
Slice serving nine people. Keep sealed out 1 day in refrigerator for 5 days freshness.
