2 over ripening Plantains (mashed) buy fresh
1 tablespoon Butter
½ teaspoon Nutmeg
1 ½ teaspoon Salt
½ cup Brown Sugar (any sugar)
1 teaspoon Vanilla Extract
one drop or 1 teaspoon Food Coloring (red)
Plantain Tart Dough
1 lb Flour (all purpose)
½ cup Flour (all purpose) - put aside to use while kneading.
6 ½ tablespoons Shortening (equal 3.5 oz) light mayonnaise
½ teaspoon Salt
1 tablespoon Water (Ice Cold)

Directions

Cook Filling:

First, Put to heat a pot for stewing. Add all the ingredients and set your stove gauged on low flame.
Now, allow the plantain’s tart filling to cook for 2 minutes. Add the Food Coloring. Once complete allow to cool. Then you can use it late as the plantain tart filling.

Make Dough:

First, sift the flour and salt in a large mixing bowl. Break the shortening into small pieces. Now, use your fingers knead the shortening and flour until coarse, fine, and crumbly. Add one tablespoon of cold water to the flour mixture. Knead into dough. Put dough on a lightly floured baking board, use a rolling pin, and roll the pastry out.
Now, use a bake tool that can make shape of all size and cut a circle, to the size of a normal patty or twice your hand. (You and use a small plate or soup bowl). Fold the circle in half. At this time unfold, and then add 3 to 4 tablespoons of plantain tart pastry filling. Now, use a fork to clamp the edges seal. OK baking time, cut grease paper to the size-baking tray you will be using. Put the patties inches apart on the tray. Do not grease the baking tray. Cut little ventilating line about ½ inch on top the plantain tarts before baking.

Bake it:

Bake the patties in a preheated oven 350°F for 30 to 35 minutes it will look golden. Allow to cool before serving it will be very hot.
You can sprinkle powder sugar on top if you love sweets. Finished with this recipe you will get two plantain tarts. Enjoy eating this Jamaican Pastry.
