2 cups Cornmeal (grain) buy fresh | |
1 ½ cups Sugar (granulated for lighter color) | |
¼ cup Four (any) | |
2 cups Cow's Milk | |
2 teaspoons Vanilla Extract | |
1 teaspoon Nutmeg (grounded) - use it's maze to add favoring; if have | |
1 teaspoon Cinnamon Powder | |
¼ cup Butter (moisten) | |
¼ teaspoon Baking Powder | |
½ cups Raisins (any dried fruit) | |
2 cups Water |
TO CREAM THE TOP: (pour this on up of the cornmeal pudding) - optional
½ cup Cow's Milk | |

Cassava Pudding Coffee Sauce: | |
1 teaspoon Coffee | |
add some Condensed Milk | |
6 tablespoons Rum (any rum is good) |

Directions

Prepare it:
Combine all the liquid ingredients in a pot for stewing.
Add water, coconut milk, salt, sugar, vanilla extract, nutmegs’ mace, and raisins.
Allow to boil while you stir on low heat.
Now, while that boils, combine flour, cornmeal, grated nutmeg, baking powder and soda, with cinnamon powder, all the dried ingredients on one container.
Do one of two things at this point.
First, sure the stove’s flame is gauging very low.
One - take half the warmed liquid mixture; use a wooden spoon mix with the flour mixture to dough. Then add to boiling liquid on the stove. To avoid lumps do it this way.

Two - Add the dried mixture to the warmed liquid mixture boiling on the stove.
Next, stir in properly until thicken, very stiff, not running.
Preheat oven 8 minutes before baking.
Greased a 9 inches baking pan, Cut two pieces of greased papers to the size baking-pan you are using for easy removal.
Remove nutmegs’ mace from dough!
Pour the thick cornmeal dough into the baking pan.
Put to bake for an hour 15 minutes at 350 degrees F.

Allow cooling before serving.
Caribbean Cornmeal Pudding nice served with coffee rum sauce.
Caribbean Cornmeal Pudding is good out for one day. It is because you used coconut milk. Refrigerate no more than 4 days.

TO CREAM THE TOP:
Add together 1/2 cup of coconut and cow's milk, add sugar, cinnamon powder, and stir properly. Pour on top cornmeal dough, before baking.
