2 ½ cups all-purpose flour buy fresh
½ teaspoon baking soda
2 teaspoon baking powder
¼ teaspoon Salt
½ cup Butter
¾ cup Sugar
1 large Egg - beaten
1 cup Cow's Milk
1 teaspoon Vanilla Extract 1
teaspoon Nutmeg - grounded
1 tablespoon Zest of one orange
1 ½ cup Fruits (Blueberries, and Raspberries; diced or not)

Directions

Preparation:

Preheat oven to 375 degrees F (190 degrees C). Use a 12 cup muffins pan. Add the paper cups. In a large bowl, combine flour, baking soda and salt; add the sugar. All the dry ingredient.
In a separate bowl, add the coconut milk, the butter, with the egg and other liquid ingredients. After all that add the mixed fruits. Add the blueberries and raspberries).
Mark as complete

Bake it:

Use a ice cream scoop to fill the muffin cups. (One full scoop is good).
Bake in preheated oven for 20 to 25 minutes, use a toothpick inserted into center. It should come out clean and dry.
