2 ½ lbs Conch (prepped and cleaned) - chop it in tiny chunks - important buy fresh
1 ½ tablespoons Salt - I use sea salt
1 ½ medium Onions - chopped
6 cloves Garlic - diced
2 stacks Scallion - chopped
1 whole Scotch Bonnet Pepper
3 sprig Thyme (fresh) - use for flavoring only
2 teaspoons Browning
Wrap & Roast Conch Pepper Sauce: (use this to pour on roast conch)
12 x 12 inches Foil
½ tablespoon Sea Salt (any salt is good)
2 stacks Scallion - chopped
2 whole Onions
2 whole Scotch Bonnet Peppers
2 sprig Thyme (fresh) - tie together the size of two fingers
6 cloves Garlic - mashed or diced
1 ½ tablespoons Vinegar - white or flavored
1 lb Cho-Cho - peeled and diced
1 lb Carrot - diced
1 dozen Okra - diced
1 lb Pumpkin - peeled and diced
1 lb Irish Potatoes
1 pack Chicken Noddle - like you use in soup
1 ½ tablespoons Parsley Flakes - dried or fresh
1 teaspoon Sage
2 cups Water

Directions

1.

Prepare Seasonings:

1) Chop cleaned Conch in tiny chunks; this step is very important. 2) Marinate Conch for several hours overnight is best.
3) Do not remove the seasonings. 4) Grease foil with butter or oil lightly (this will prevent sticking).

Wrapping & Cooking it:

5) Wrap seasoned conch with foil tightly and properly. 6) Roast on each side for 10 between 12 minutes on a hot grill, and then finished.
