2 cups Flour (all purpose and unsifted) buy fresh | |
½ cup Butter (Margarine) | |
½ teaspoon Baking Powder | |
½ cup Sugar (brown is best); you could use granulated. (Please note: I used one cup sugar, it works for me, if baking sweet potato pudding to sell use 1/2 cup more.) | |
1 teaspoon Vanilla Extract | |
¼ cup Cow's Milk | |
¾ teaspoon Salt | |
2 whole Eggs (beaten) | |
½ teaspoon Cinnamon Powder | |
½ teaspoon Nutmeg (grounded) | |
½ teaspoon Mixed Spice (optional) | |
¼ cup Raisins (optional) | |
½ cup Coconut (shredded finely) |

Directions

Preparation:
Soak raisins in water for 30 minutes.
Grease a baking tray with butter. Put aside for later..
Sift the flour, baking powder and the spices together, and then add sugar.
Combine the butter with flour mixture to crumbs using your fingers, or an wooden spoon. (Note: nicer the butter better the taste)
Next add the beaten egg and the vanilla to that.
After that, add the coconut milk, and then add the soaked raisins.
Mark as complete

Mix Dough, and then Bake it:
Combine mixture together to form a hard dough. (Not runny nor liquid.)
Use a tablespoon to form the shape of a small rock.
Lay them on a baking tray inches apart.
Preheat your oven 8 minutes before you bake at 350 F. for 15 minutes.
Allow cooling before serving..
Enjoy eating this Jamaican Pastry.
