½ cup Pineapple Juice | |

3 tablespoons Ketchup | |
1 tablespoon Food Cornstarch | |
¼ piece Ginger Root - optional | |
CHICKEN BATTER STYLE#1: (use this to coat chicken chunks after frying it) | |
1 or more cups Flour | |
¼ teaspoon Salt | |
CHICKEN BATTER STYLE#2: (use this to coat chicken chunks after frying it) | |
3 tablespoons Flour | |
3 tablespoons Food Cornstarch | |
2 tablespoons Water | |
¼ teaspoon Baking Powder | |
¼ teaspoon Baking Soda | |
1 tablespoon Cooking Oil | |
1 ½ tablespoons Cooking Wine: (Use Sherry, Rice Wine, or (Kwangtung Mijiu: it flavors gin), use your favorite Chinese cooking wine.) | |

2 or more lbs Chicken Parts with Bone, or Boneless; (chopped in chunks) | |
2 to 3 cups Cooking Oil |
TO SPRUCE FLAVOR; THE CHEF RECOMMENDS USING THESE HERBS: - optional
½ teaspoon Rosemary (dried or fresh) - flake it | |
½ teaspoon Cilantro & or Parsley (dried or fresh) - flake | |

Directions

Preparation:
To make sweet and sour sauce boil ingredients on low heat until it thickens.
Wash, strip, and dice seasonings clean.
Chop tiny carrot sticks or flakes, chop onions in quarters separate the leaves.
Marinade chicken chunks for some hours or overnight.
Mark as complete

Cooking; & How to Serve it:
Put a stew pot/pan to medium heat, and then add the oil.
Allow oil to get hot 350 Degrees! Flour chicken or dip it in liquid bather! Next add the coated chicken chunks in the heating oil. Allow to fry golden on each side for 3 to 4 minutes. Ensure the chicken is cooked good.
When serving it, add the onions, carrot sticks, with cooked chicken chunks in the sweet and sour sauce, and it over white rice.
