1 ½ lbs Sweet Potato - shred it fine - to puree buy fresh | |
1 ½ cup Sugar (brown) - Please note: I used one cup sugar, it works for me, if baking sweet potato pudding to sell use 1/2 cup more. | |
1 cup Four (any) | |
½ cup Cornmeal | |
2 teaspoons Vanilla Extracted | |
1 teaspoon Nutmeg (grounded) - use it's maze to add favoring; if have | |
½ teaspoon Cinnamon Powder | |
1 teaspoon Mixed Spice | |
1 teaspoon Butter (moisten) - room temperature | |
1 teaspoon Baking Powder | |
½ cup Raisins (any dried fruit) | |
2 cups Cow's Milk | |
1 teaspoon Salt | |
½ cup Red Wine or Water |
TO CREAM THE TOP: (pour this on up of the sweet potato pudding) - optional

Directions

Preparation:
Peel skin; and washed the sweet potatoes.
Grate the sweet potato fine with stainless/aluminum Jamaican, or vegetable grater.
Soak the raisins in red wine soften it.
Cut two pieces of greased papers to the size-baking pan you are using.
Next, grease the pan with butter or oil. Then lay the pieces of greased papers flat inside the baking pan.
I am using diameter baking-pan size: 8.5 inches with a lid.

Combine it:
Now, sift dried ingredients flour, cornmeal, mixed spices, salt, and grated nutmeg in large bowl; add grated sweet potatoes.
Add sugar and butter with all ingredients.
Use a wooden spoon combined with love. Mix properly!
Next, add dough to the greased baking pan.
Lift and dropped baking pan three times releasing air bubbles.
Cover with baking pan's lid properly.
Alternatively use foil, or a pot's lid, that has no plastic on it.

Bake it:
Put in preheated oven at 350 degrees F. rack up one from middle.
Set timer for an hour 35 minutes.
If you are using 7 inches baking pan the time is 45 minutes.
Baking times precise, not less, burned if more.
When the sweet potato pudding finishes, allow cooling. Use a knife score between the pudding’s sides of baking pan.
Turn upside down removes it in a plate.
