12 ounces pack Tofu buy fresh
1 large Onion (sliced)
1 stack Scallion (chopped)
½ piece Scotch Bonnet Pepper (ripe)
1 whole Sweet Pepper (sliced)
sprig Thyme - tie together the size of 1 finger
¼ teaspoon Pimento Berries - dried
2 to 4 tablespoons Cooking Oil
2 teaspoons Salt
2 small Carrots
1 tablespoon Cilantro & or Parsley (dried or fresh)
6 cloves Garlic (mashed, or gain to puree)
1 medium Irish Potato (peeled and diced)
1 teaspoon Curry Powder
¼ cup Coconut Milk
1 ½ cups

Directions

Preparation:

Chop tofu in chunks,..! Peel, wash, and diced all the vegetables.
Put to heat a dutch pot. After one minute, add the garlic and, add the coconut oil, then onions. With your stove flame set on medium 4. Stir-fry for one minute.

Cook it:

Next, add curry powder and the tofu. Continue stir-fry until the tofu are soaked with the seasons. Now, add the water and then coconut milk. Put the peppers in the pot. Stir in then put the pot's lid sealed properly.
Allow to cook for 20 minutes on medium low Flame. After that time, add the tomatoes, diced Irish and sweet potatoes, cho-cho, and carrots.

Stir in, allow to simmer for 10 minutes more on low flame. Total time to cook is 35 minutes.
