8 ounces Chunks (soak in water for 10 minutes) buy nice chunks | |
1 large Onion (sliced) | |
2 stacks Scallion (whole and fold) | |
½ piece Scotch Bonnet Pepper | |
1 whole Sweet Pepper (sliced) | |
¼ teaspoon Pimento Berries - dried | |
2 to 4 tablespoons Cooking Oil | |
2 teaspoons Salt | |
2 small Tomatoes | |
2 small Carrots | |
1 tablespoon Cilantro & or Parsley (dried or fresh) | |
4 cloves Garlic (mashed, or gain to puree) | |
1 medium Irish Potato (peeled and diced) | |
sprig Thyme - tie together the size of 1 finger | |
1 teaspoon Browning (alternatively burn 1 tablespoon of Brown Sugar before you fry. | |
½ cup Coconut Milk | |
1 ½ cup Water |

Directions

Preparation:
Soak the chunks in water to cover it for 10 minutes. After that, drain well.
Peel, wash, and diced all the vegetables.
Put to heat a dutch pot. After one minute, add the garlic and, add the coconut oil, then onions.
With your stove flame set on medium 4. Stir-fry for one minute.

Cook it:
Next, add the soaked chunks. Continue stir-fry until the chunks are soaked with the seasons.
Now, add the water, and then coconut milk. Put the peppers in the pot. Stir in then put the pot's lid sealed properly.
Allow to cook for 20 minutes on medium low Flame.
After that time, add the tomatoes, diced Irish and sweet potatoes, cho-cho, and carrots.
Stir in, allow to simmer for 10 minutes more on low flame.
Total time to cook is 35 minutes.
Brown Stew Veggie Chunks is best accompaniment with brown rice or fresh plain vegetables.
